Even though magic exists in their universe, most people have never seen it. Maesters are the ones with all the knowledge and they're skeptical about anything. Even as far as the R'hollor religion goes, Thoros of Myr thought it was bullshit until he could resurrect people.

No one would believe him, and would probably think he's either insane, or lying in a weird attempt to con people.
