Because alien was planning to hitch a ride to more meat.

Had Ripley not seen it, the escape pod would have taken it to humans. It knew it needed Riplay, as it didn't know how to operate the ship by itself.

Though there was an unused ending in the script, where alien did kill her, after which it contacted humans and imitated Ripley.

It didn't register Ripley as a threat until she pissed it off by venting shit onto it. This demonstrates it's intelligence as a perfect organism above the simple animalistic tendencies of any other apex predator, such as a lion or bear. These animals would just attack, but the Xeno considers her no more a threat than a bottle of ketchup sitting on the counter.

"I'll enjoy that later, but it's not going anywhere. Zzz..."
