Jon is away from the North almost certainly at the very least for more than a month, perhaps several months during which those battles happened. You can also imagine Euron returned to KL with the "gift" within the period of several months, all the while Dany sat on Dragonstone and possibly tried to attract more allies and figure out the logistics of her invasion.

When Arya returns to Winterfell and Jon is informed about it, that belongs to some non-linear timeline that happened after he left.

Teleportation only works for areas you've already been before. The Night King forgot to attune himself to all the towns during the last invasion so he actually has to walk the distance.

Same thing happened with Grey Worm. Euron could take his time attacking Yara's fleet and hanging out in King's Landing because he and his fleet had Casterly Rock as their Return Point.
