You know exactly why it happens. It's to make battles exciting. This first happened in the Kobayashi Maru scenario in STII. It didn't happen in the real battles in that movie except when the Reliant bridge took a direct hit and after that, when the ship was crippled by a massive volley. After that it spread to TNG and the rest is history.
