It's easier to just say "we don't have religion in the future", if you tried to bring human religion into the show you'd have to make a lot of complicated decisions about how the various religions around today spread and evolve over the course of the next 200-300 years. Gene never really had full control of Star Trek. Even during early TNG, he and his lawyer (Leonard Maizlish) would sneak onto the set and alter scripts without the writers' knowledge, because they couldn't get away with what Gene wanted out in the open.

Getting rid of "God" isn't faithful to what Star Trek actually was, but it is faithful to what Gene wanted it to be.

That is a very unrealistic way for language to evolve.

It basically nullifies everything about the basis of the show. Torment of Tantalus was already way too big of a retcon but they left it alone once it was over.

Not everything about the series is retconned. Catherine will know how the gate works but fake not knowing right up until the original movie. All her feelings regarding Ernest are fucked because she'd not surprised it was activated. Goa'uld will now have re-encountered the Tau'ri before the movie and therefore had reason to be hostile against Earth before the series made that the case. And the only option is another retcon to make some toher big baddy that isn't Goa'uld the main foe even though the Goa'uld have been the supreme baddie in the Galaxy for millennia.
