The LOTR trilogy. Jackson fixed a lot of the book's weird pacing issues and made the characters more three dimensional. Some of his changes weren't good, but most of them made a more engaging story.
The Crow. The movie isn't just a montage of a guy in makeup killing people and cutting himself. More coherent stories are always a good thing.
The Thing is a pretty obvious one.

Fuck you faggot. The entire point of the movie is what people will do when they're pushed into a corner with no outside perspective. Blinded by fear, humans will do anything, to a fault. The events immediately before the ending are a product of that blind fear, and the twist is the ultimate way to drive that home.

If you havent seen it in black and white I'd highly recommend it. Its honestly like 5 times better.
