this is actually a brilliant line, because he knew the robbers were being lied to by the joker, hence referring to them as sheep, and was trying to warn them

Ewan wasn't The Joker. It was an alias for Dunheir. Dunheir was supposed to have been done by then. The heist ruined. His hubris ruined everything.
