I'm not excusing some of the shit they tried to pull in the movie (like the advanced knowledge of flying the Falcon) but her character makes a little more sense in the terms of "tossed into adventure and adapting quickly."

Her knowing things like how to repair ships makes sense as she is constantly taking them apart for parts to scrap; she would have a prior knowledge of what things are. Climbing the walls of Starkiller base made sense because she is used to it from scaling things like the crashed Star Destroyer. Talking to droids is kind of a long shot but makes sense as there seems to be a lot of them on Jakku; you would need to know how to speak droid to make deals and trade.

For the most part, neither characters are a Mary Sue. It's just that they made some reeeeeally odd choices with Rey that stand out like her instant understanding of the Force and being able to pilot a ship without ever leaving the planet. She gets her shit kicked in by Kylo Ren and captured which people tend to forget because it's followed almost instantly by her mastering a Force trick and getting free with no fucking training.

When people call Rey a Mary Sue, they are only really right about the Force related shit. Which, they have every tight to be. But the other things make sense in context to what we are shown in TFA. So, if they don't really explain how she picked up on all that, then they really do deserve the flak.

luke growing from naive, whiny farm boy into capable hero is half of why star wars works. example: luke meets ace pilot, han solo -- he's out of his depth in the mos eisley escape, but starts to learn during the death star escape.
"great, kid, but don't get cocky!" <- luke slowly wins the approval of ace pilot han solo, an effective and satisfying moment, made meaningful in contrast to his eariler bumbling

imagine instead if luke suddenly took over the controls during the mos eisely escape, and he was the one who got them out of the mess. "wow you're so cool" says ace pilot han solo, amazed at this young go-getter.
imagine if during the training, luke was effortlessly blocking the blasters. finishing by cutting the training drone in half with a flourish. "wow you're so cool" says wise old obi-wan, amazed at this young go-getter
