You can take an egg out of the carton, crack it into a bowl, and have it 100% cooked in 45-50 seconds start to finish using a microwave. If you have anything but an induction stove there's no way you can cook it that fast, and then you still have double the amount of shit to clean up.

The problem with Ramsay is that he believes (for the most part) people will pay for a quality product. The reality in some places is that there just aren't enough people who give a fuck about good product to keep your business alive. The expectation that you can get fresh product or have the money/time to make arrangements with local farmers for their farm-to-plate product is just unrealistic when you're charging anything less than $30 for an entree.

For the most part he understands the limitations of some places (he honestly doesn't expect people to churn their own fucking butter) and he's once or twice chastised places for having TOO complex/expensive ingredients and telling them their restaurant is in bumfuck nowhere and nobody knows what Genoa sausages are let alone can pronounce them.

I've never watched his American stuff but a lot of his UK stuff where he isn't yelling at people he's fairly informative.

One of his other problems is that his expertise is narrowly in the French tradition. There are times where he's shit-talking Asian cuisines for their presentation and flavor and it's obvious he just doesn't have experience with it.

North America and the UK are not fucking Japan or China. The average chef can't go to goddamn market every day nor do the farmers go into town every week to stock restaurants. And even in Japan you needed to be in Tokyo to pull off that crazy fresh off the plane/boat because Tsukiji is there.

The restaurant business is a shit business with garbage margins. 99% of the time it is never worth your money for a chef to personally vet the raw ingredients before buying it. They often have to trust on past business and experience that whoever they order from won't fuck them. That 1% of the time is 3-4 days a year when something brilliant is in season and you happen to live in a city with a dock where you can get the best fucking fruit and fish just as it comes off the boat.

Every year I get a box of Filipino mangoes. The shit we get from Mexico is heinous.

Ice cream and gelato need to sit for a while to ensure that your flavors diffuse throughout the product and especially the fat. If you eat ice cream right away you get a mostly mechanically mixed product.

Freezing ice cream is really only a problem in the long-term if it's exposed to air and allows the water to crystallize out which gives it a bad texture. If you seal your ice cream it will last for a very long time.

Whole pieces of corn means the cook threw in a can of creamed corn. What they don't know is that the reason why they're adding the can of creamed corn is because of the sugar content. They can achieve the same degree of flavor by just adding sugar to the batter.

You get the cheap mexicans to come in before the restaurant opens to prep all the food: chop the veggies, marinate and slice the meat, the shit that takes you forever to do when you cook at home. When the chef and line cooks come in they are just piecing it together and cooking it properly, easy stuff for actual chefs. These shitty restaurants do awful or no prep work so they are left microwaving frozen food or trying to cut stuff up making customers wait longer and longer.

It's not a difficult process, these owners are just retarded and don't actually see what happens in the kitchen, just hang out on the sidelines and then wonder why they get no business. An owner that is overbearing with shitty ideas is just as bad as one that doesn't do anything at all though.

Certain ingredients that don't require delicate preparation are usually prepared before lunch/dinner rushes en masse. Back when I was working at a Korean restaurant we would prepare pretty much all the veggies and a few of the more time consuming sushi recipes ahead of time. During down time we would top off our prep foods. Head chef, prep cook and dishwasher chopping veggies or cutting meats. Sushi chefs doing the same with their own ingredients like deboning eel or making more sticky rice.
