Two reasons.
1. The Writers. Game devs are bigger nerds who've read more sci-fi novels, whereas most good sci-fi movies are based on one novel rather than a conglomerate of ideas from several.
2. Scope. Video games are longer and are therefore able to include more ideas.
Get a real sci-fi nerd to write a series for you, and you have some real opportunity for magic. See Star Trek, for example. But novels remain the by far superior medium for sci-fi.
