Why did he shoot the giant instead of Jon
No one knows

why did he shoot Jon during his monologue

Sansa stil would exist. Jon is not at the moment the heir, and certainly isn't why the Vale cares enough to be their. He was hoping for one on one combat, like he says. A long shot but better then nothing

probably the sadistic joy of killing off something thats the last of its kind.

Because D&D are hacks.
Bcuz Jon snow can't actually die and he's ebil sadistic man ;(
Bc the writers for the show are terrible and nothing makes sense. The show was fine when they were basing the episodes in material already written by a talented writer, but now that they have to make up their own material it is terrible tier quality.

This is the ideal male writer. You may not like it, but this is what peak performance looks like.

if he shot jon, then jon's men is just going to gang up on him
if he shot the giant, then he challenge jon to a duel, then he might win and jon'll have to let him go, and jon being pissed off would give him an edge

It's easy to understand tho.
It's the same reason he shot jon's brother : bait him to set up his plan. In this case if he shot Jon he s a dead man, but if he angers him, he can bait him into duel.
