Because you have 2 types of photoreceptors in your eyes, rods and cones. Cones are responsible for color vision in bright environments and rods are responsible for low light vision. In dim conditions both rods and cones are active but they share the same neural pathways via the rod-cone junction. The signal from the rods is then added to the signal of each red, green and blue cones, with the highest input into the blue channel. That's why all objects in the dark shift their colors towards bluish hues. In typical cinema conditions, an average scene will be brighter than that range, so to simulate this effect colorists add blue tint to night scenes. This is a technique which dates back to Rembrandt and possibly even farther than that.
