Sheev didn't NEED to kill Plagueis in his sleep. He did it out of spite. Sheev was fucking pissed that Plagueis had basically manipulated him his entire life. Into killing his family, becoming a sith lord and all that. His ultimate revenge was turning the tables and denying Plagueis everything he worked for.
