What I really wonder is the direction of influence
So not every audience has seen small cult movies from Hong Kong but everybody in the world has seen Hollywood blockbuster
So in the world of filmbuffs every director of every country has more or less seen movies of every countryand got influenced by them. They saw the influence as a bilateral
But in the real world the audience divide the world into Hollywood and the rest so they see the influence as a one way: the rest of the world got influenced by Hollywood and Hollywood got their inspiration from nowhere

Agreed Bourne and The Matrix exist in every action movie nowadays. Maybe add 300 for it's speed ramping and slow motion.
To OP's question in terms of subject matter Blade basically kick started the super hero trend. Also The Phantom Menace proved to studios that you can release whatever shit you want and fanboys will not only make that successful but also the shitty sequels successful.
Point being that the current culture zeitgeist was formed in the late nineties and early 2000s.
