Everything Elfman orchetrates sounds like ass. He takes a real orchestra, makes it sound thin, unrealistic and without any substance. The only thing he does decently, is woodwinds.

Maybe for the finals, and premieres they'll use them. But not every episode. The composer only gets so much money per episode, and he has to pay for the session musicians himself depending on the deal.

He is a great orchestrator, so he can work inside the box and call cues from sessions to fill the rest.

The point was that Elfman is a terrible orchestrator. He has no grasp on how to articulate instruments. He can take a multi-million dollar budget for session musicians, and have it sound awful. The players can only do so much, when the sheet music in-front of them is done poorly.

People on tighter, or little to no budgets for features (like shirley) can produce great, realistic sounding music. Which puts everything Elfman did to shame by comparison.
