Because Letterman wasn't still around to protect him from Les Moonves, who disliked the show. He only kept it around because it was a Worldwide Pants production. Also Craig was very likely tired of the bullshit and monotony.

I'm not sure I can fully fault CBS. Dave was expensive and it was clear he wasn't making any gains against Fallon. So rather than get canned outright and cause CBS to lose face, Letterman was given a big retirement send-off.
Colbert may have looked good on paper, but that's not turned out very well. I think he's just a place holder until CBS finally decides to say "fuck it" and abandon late night altogether. Who on earth would be a suitable replacement?
Corden's just shit and has not established himself as the 12:30 slot's dominant show. I'd rather Craig still be around, but there was no overcoming Moonves unless he generated 90's era Letterman ratings, which is impossible now.

He actually wanted to dip before Letterman announced his own retirement and had to postpone his own announcement so CBS wasn't left looking completely fucked. He fucking hated the industry. His final segment with Leno wasn't exactly friendly to it.
