I've had chicken on pizza before and it was meh. It's a very bland meat to put on a pizza, especially in the context of very powerful flavors like pepperoni and jalepeno. Plus the texture is weird. Pizza has a lot of soft textures in it between the bread and cheese, and part of the appeal of toppings like pepperoni, peppers, etc is that they should provide crunch. Chicken is just more mush.

None of them mentioned it at all. The restaurants are Fleming (closed, Miami), Chappy's (closed, Nashville) and Antonio's (open, Nashville). Fleming and Chappy's were really bad. Like terrible. Fleming was a Danish restaurant. What is Danish food, even? Chappys was frankly insulting because I was born in Louisiana and have lots of family there. They served the saltiest, goopiest gumbo I have ever tasted and their owner had the gall to blame Gordon Ramsay in the papers here when his shit restaurant went under.

Antonio's I actually have been to like 10 times because it's by my grandmothers house and she likes it. Their food is usually edible but I stick to pastas with marinara sauce there after the time I decided to try a mushroom risotto

Basically you grip the pizza with the crust, just like you eat ice cream by holding the cone. If you're a filthy degenerate who can't wash their hands, it follows that the cone/crust are infested with whatever you have on your hands and therefore would avoid putting those germs on your mouth.

There's a few places that Gordon really helped out. Mostly the places that stuck to the new recipes and menu he created (a restaurant known to serve Ramsay's recipe's will probably thrive).

The places that kept up his changes, even if it meant radical overhaul of the places generally kept open and in many cases thrived. In most places, they were unwelcome to Gordon's changes and simply went back to their old menu and ways of doing things and folded.

The most dramatic case of this is the British woman that ran a vegan food joint in Paris. There chef was a nut that would take an hour to put out 2 plates, he walked out singing and making threatning remarks (a true nutter, belonged in an asylum), the waitress split, the owner walked out for good the next day and it was just gordon and his temp chef doing the work.

A year later, the vegan food restaurant owner (very hot) was a known high priced escort in Paris....

I'm pretty sure it hurts when Gordon calls you out on your shit, but he knows how to make good food and run a restaurant. If they stay humble and implement his advice, they usually stay afloat.

One of the most touching ones was the guy running the dog friendly hotel in Vermont. He seemed like a genuinely sweet guy that was clueless about how to run a hotel.... And since he kept up on Ramsay's recommendations the place is hugely successful. I always like reading current reviews online of the restaurants/hotels he visits. It's nice to hear when they turned it around.

Salami, prawns, chicken, tomato, spinach, bacon, mince, avacado, mushrooms, steak (or lamb) and what ever sort of spices you like (chilli, paprika, mustard etc) with maybe a swirl of mayonnaise. The sauce should contain tomato, garlic and onion by default.

The addition of pineapple or other sweet fruits shouldn't be done on a pizza like above, but a simple cheese, ham and pineapple works flawlessly. I've done this before (adding pineapple to my over cluttered pizza) and the pineapple produced too much liquid as it cooked and really took over as a major flavour (I tend it favour meat or tomato being the strongest flavour).

freezing seafood is acceptable imho, you can't purchase volume and then expect to sell out every day or every other day, that's insane. Specially for dishes like prawns or calamari.

Reheating shit is a problem, but even then not everything is beyond the pale, you can reheat soup or stock and it wouldn't make any difference if it's never been taken off the heat or it's been frozen previously

Depends. IIRC the issue wasn't frozen food, but that one of his restaurants was preparing dishes that were packaged and shipped to his smaller cafe, where they were reheated and sold.

Not quite the same as freezing.

As for seafood, it's like meat. There's ways to preserve it without freezing, and its very obvious when a fish has been frozen just from the taste. Freezing causes cells to burst and release their water, resulting in a dry taste.

Rather, instead for restaurants like these they "superchill" the fish - submerging them in a brine solution JUST below freezing, to preserve the freshness over long distances.
