Didn't they include the explanation as a montage or something? At least in the book, they explained there was a microtear in one of the layers during the fabrication process and the constant contraction/expansion cycling of the airlock eventually tore it open.

The crew members all had multiple skillsets & roles, but Watney's botany experience was for soil experiments.

Finding out if and how earth crops could grow to sustain a colony is a pretty big deal and not something we could do off Mars. Even if you get the soil exactly right, you still have different atmospheres, sunlight, and weather conditions.
