it's important to realize that the Silmarillion is conceived of as a myth. asking what Ancalagon ate is like those classical Greek writers who read Homer and were like "hey, where the hell IS the land of the Lotus Eaters anyway?!"

Only at a very VERY late time in the development of his work (like, post-LOTR) did Tolkien go back and attempt to square the myths with reality at all.
