Well there's a very unusual but very intense car chase scenethat involves only one carin the indie movie Cold Weather.
Then I guess the classic obvious answers are Ronin (comfy European cars) and both Gone in 60 Seconds movies. The first Gone in 60 has a really really long chase if I recall correctly.
I think my dad told me there's a cool chase in The French Connection but I haven't seen it.
