Which version of Blade Runner should I watch?
Director's Cut.
The voiceover blows goat choad, way more atmospheric... much like all of cyberpunk, it's style over substance; the pretentious, over-the-top extra long dialog-free scenes set to weird music fit the aesthetic well. Same with the semi-ambiguous ending.

The new one coming out this year.

This is the wrong answer. The Final Cut is the only cut you should be watching. The Director's Cut is a false cut released without Scott's blessing. The Final Cut is the true cut.
