I don't think it's 'soul' in a metaphysical sense, more just freedom or resilience. Conan spends his whole life enslaved physically and mentally by others but retains his own free spirit and will and steel represents the will to fight for that freedom.

Unlike women or other people steel does not manipulate or subjugate your free will which is why it is truer than most things. Howard often explores the idea that true evil is the manipulation of others. Later Conan never rules through tyranny but because others look to him to protect them and wish to follow him. He doesn't beleive he has a right to rule independent of their free will.

It's ok to do a loose adaptation but LOTR runs rapidly into the problem that the original content they came up with is dreadful shit and consequently leans heavily on story that it ultimately doesn't believe in.
