There's not an in universe reason in the film but the Voight-Kampff test is probably cheaper and simpler because the replicants have no empathy. Mention an animal and they flip out.

Replicants are just genetically engineered humans, made to be disposable slaves and with artificial lifespan of 4 years so they don't develop emotions and thus the whole morality of their slavery coming to be a legal issue.

There is no reason Replicants couldn't be created without lifespan limit. Rachel was a sort of example of this. Tyrrel trying to recreate his dead niece i think? Anyway Rachel didn't have the lifespan limit. So why not Deckard too? Perhaps the Earth is in fact full of special classified lifespan limit-free Replicants serving as Bladerunners and other especially dangerous jobs.

There wasn't really a need for holograms or massive visuals because everything was done through the Net out of your cyber brain. You had meetings, watched the news, even had sex through the Net. The visuals are objectively great but it feels too clean. Too perfect. Every shot feels composed, it lacks some kind of "organic" (pun not intented) feel to it
