I personally think it's because NGE can be anything you want it to be. Existential struggle both psychologically through Shinji and physically through the Angels that can destroy all of humanity. The psychology of Shinji and his struggles to cope with human interactions and shit. Figuring out his place in the world, his relationships with the girls around him, Misato, and especially with his father. Misato, Asuka and Rei all struggling with their demons and figuring their relationships with everyone out as well.

Or it can just be a cartoon about robots vs giant monsters if you want. I think the appeal comes from it appeals to a lot of people for a lot of different reasons. That's just my theory anyway. Plus I think marketing had a lot to do with it. It is fucking everywhere. Herd mentality might help in spreading it.

Shinji's development and depression ARE the main plot of Eva. The instrumentality project, angels and giant robot fights are just the vehicle used to push Shinji's plot forward.

That's why the final two episodes were sufficient enoguh to end the series, and End of Evangelion was not needed at all. Though I like EoE too.

this movie would never get made because Evangelion is not popular outside of Japan, it's not Ghost in The Shell or Akira which got decent exposure in the west in the 90's. If someone ever decided to make an Evangelion live action movie I would be of course excited but it would most likely be a flop and most studios would not want to produce a film likely to flop in the box office.
