Every movie has taken what people enjoyed about the previous and ramped it up. Look at the first two which were pretty grounded basic car type movies and then look at the last two which have basically turned into a saturday morning car cartoon.

It no longer tries to be anything but a bunch of over the top insanity and while that is not for everyone it works for a lot of people that just want to sit back and enjoy something.

The last few laps are pretty entertaining when people start trying to overtake more and take bigger risks. Most movies are trying to be high art or go dark for no reason.
Fast and the Furious movies know that they are popcorn movies. And don't really go too far from that.

If you like 5, you'll probably enjoy 6 and 7.
Then go back to 1-4 to understand the characters origins. Then watch 8.
8 isn't as good as 5, 6, or 7, but it's a decent middle of the road movie with a couple great scenes. And it relies heavily on being familiar with the franchise so I wouldn't go in without having seen at the least 5-7.

There are lots of franchises that reach high numbers of sequels and bank on mindshare to keep getting more. But most of those franchises are diminishing returns. Fast/Furious franchise does well because they are constantly expanding their world out. They've had movies in California, Mexico, Brazil, Dubai, Japan, England. And in the new one they go to Cuba, Germany, Russia, New York. They make a solid effort to be an international Franchise, and people are responding positively to that.
