I started reading WoT last summer, and I'm on book six. This series is pretty great so far, I think my favorite part is how Jordan gives everyone a memorable personality and dialogue tag within three lines of being introduced, that's a real talent in my opinion.

For real though.

I can't see this turning out well. There would have to be close to a thousand recurring actors with very specific looks, massive battles requiring assloads of props, astronomical amounts of gratuitous CGI requiring who knows how much computer power to do justice and main characters who can change enough to reflect the characters changing in the series. Not to mention all the monologues and the narrative that heavily depends on them.

As someone who read them and enjoyed the books as a teenager I honestly can't recommend them. The first few books are alright but there are terrible pacing issues, and past book 5 or so 90% of each book is dumb bullshit that has little relevance to the story. If you do read them prepare for literally thousands of pages about irrelevant side characters doing fucking nothing.

As infantile as WoT can seem at times. It's still more mature writing than the shite that is GoT. ASOIAF was shit when I read it 11 years ago and it's just gotten worse.

I've read most fantasy on the market that isn't super obscure stuff. And no, WoT is not as good as Malazan Book of the Fallen, Black Company or The First Law etc. But it's a very satisfying and comfy series to read. It has atmosphere and it grows on you.
