Fun fact - the horse they used for that scene actually died. During production, a giant tank was filled with mud while the horse stood on a hydraulic lift with its hooves bolted to it. This would prevent it from galloping away while the lift was slowly lowered into the mud. However, when attempting to raise the horse, the lift malfunctioned and the crew couldn't get to the horse in time to prevent it from drowning.

Artax did not really die. In fact, the horse was actually given to Noah Hathaway after filming as a gift. Due to the cost the horse was left behind in Germany, and he died in 2004.
