he's been saying he wants to make a movie in Australia for 15+ years.

An homage to all the shitty "ozploitation" movies of the 70s/80s could be great, especially since he loved those movies growing up. A movie set during those times about making a low budget exploitation movie funded entirely by government grants (so there was no real risk of failure, it didn't matter if no one saw it you wernt losing anything) full of people with no idea what they were doing any zero safety procedures (chase scenes were done on regular roads with no traffic control and didn't even tell police and crashes were real) could be meta and allow Tarintino to forfill his fantasy's of endless cinematic references, gorey violence and feet.

Plus tons of people involved in those movies are still working in the industry in Australia. I know a few guys who were in Mad Max 1/2, they still get bit parts in movies, and stunt guys always get work.
