Es is second person present active indicative (god i hope i'm right on this), and it means You are. Es is just the verb and doesn't really have too much to do with the conjugation of the noun.
Anyway, in English it is you are a big man. You is the subject, the one performing the action (are [being]). Man is the direct object, the thing directly being affected by the "are". In Latin, direct objects are accusatives, and the accusative sense for this declension calls for homo (nominative) to be hominem. So, magnus MUST change to match the noun. Hence magnum.

You're right about es being the second person present active indicative. The point of contention here is that 'sum/es/est/sumus/estis/sunt' does not take the accusative. Like, 'you are' isn't really a an action (let's not get philosophical, lol).
