Hitman is essentially rube goldberg assassinations: the game, so it's all about making the kills interesting and unique while at the same time acknowledging 47's ability to disguise himself and blend in, if there's going to be a shootout it is NOT going to be during the assassination, it will be people trying to double cross him after the fact and even then he's not loud and shout bangy.

First season concerns him being born and raised within the Romanian asylum by doctors and trainers, whilst coming to terms with his purpose as a killing machine.

Second season sees him come of age and escape the asylum into the very alien outside world where he attempts to establish himself as a freelance assassin and perfect his skills. Towards the end of the season, he gains the attention of the agency and is pursued to be recruited.

Third, fourth and fifth seasons you could basically adapt from the events of Codename 47/Silent Assassin, Blood Money and Absolution respectively, although adding a more human touch, referring back to how he was raised and how this influences him as a killer and person.

Sixth and final season would see him become middle-aged, facing morality, faith and putting his life decisions in perspective.

Have 47 be the villain, have it take place over one assassination and the investigation following it. Plot is framed through the investigation and witness accounts on the assassination, each have differing perspective on the event, some even contradict each other.
