Hopkins as Hannibal was a bit more unpredictable and animalistic.
Mads played him as the kind of person you'd befriend at work, he'd politely talk to you for 10 years and then one day you'd wake up and he'd be serving you your own leg and you'd even try it out.

If you are a male, this movie should really unsettle you. I'd recommend just jumping in instead of watching a trailer, but the core of the movie is Mads is a school teacher in his rural Danish hometownand gets falsely accused of molesting children.
The movie does a fantastic job of getting you to identify with the protagonist, so when things spiral out of control with him you really feel it.

I was more thinking about the witch hunt mentality of some regions of the country aswell as a lot of people's lack of respect for innocent-until-proven-guilty. A lot of people genuinely think that an accusation should be enough to convict a person for rape or like in the film; molesting a minor. But then again, that's not really exclusive to the US at all. Mads was more infectious, manipulative, more of a psychopath. He also showed that Hannibal does miss something or someone...he feels more of a human than some generic serial killer like Hopkins did it.
Hopkins was not bad at all at first, but Silence of the Lambs got old a bit too quickly. Ridley Scott's "Hannibal" was a bit more nuanced and closer to Mads though.
