He didn't turn into a skeleton. He was always one. He was dead from the beginning, Home Alone 1 and most of 2 are just his soul in hell. The moment he gets electrocuted he remembers his condition as a dead man.
Soon after that he forgets. Because he's in hell forever.

The electric shock he received sent electrons through his brain and penal gland, awakening his third eye and granting him knowledge of firmament and the demiurge. Upon learning of the meaninglessness of human existence, he experienced a kind of cosmic ennui which caused his false corporeal body to momentarily transpose to the dreamscape, starting with the outer layer of his body, which he subconsciously associated with himself due to the human ego's reliance on outward appearance for identity. This left behind his skeleton. This time of transcendence lasted only for a moment before he was emanated back to the mundane by the daemons which stand guard at the gates of elysium.
After his transcendental experience you can see a marked shift in the personality and actions of Marv for the remainder of the movie. He can't bring himself to discuss what has occurred, and is unable to fully grasp it himself given his simple-mindedness. You can see that he has more come to terms with the absurdity of this false life in Home Alone 2.

The Shrike implanted the cruciform into Marv's chest. Marv can die, but the cruciform will recreate his body. It is not a perfect recreation, however. Every time Marv dies and resurrects, he loses a bit of intelligence. That's why going into the movie, Marv is already pretty simple. By the end, he's a husk of his former self.

The real answer is early x-ray machines weren't very safe and a lot of high profile electrocution deaths occurred before that problem got fixed which established in the public consciousness a trope associating electrocution with having your skeleton become visible.
