Two things. They're there for an extremely long time. Getting footage every second of the way. There's plenty of source material to pull from.

Also, the camera guys dont interact with anyone during shooting. It's the producer in the back who are asking them questions, guiding them to do certain things etc.. So when something out of the ordinary happens they look towards the producer (off camera) and not the camera.
