Another aspect of the book that would be odd on screen would be the fact that most of it takes place in 10-minute flashbacks. "Paul ran into the arboretum to tell his mom about the hunter seeker." Cut to 10 minutes ago. "He remembered walking into the room 10 minutes ago, and having his adventure with the hunter-seeker."
Also, the trip to Arrakis, the Harkonnens taking the palace, and the capture of Paul and Jessica, along with some other establishing scenes, are never shown in the novel. Turn the page, and they're unpacking on Arrakis. Turn the page, Jessica and Paul wake up, and the palace is taken.
That would be tough to leave out in the movie, but intriguing if they stay that close to the book.
