A properly cooked well done steak is delicious, just like a properly cooked medium steak, etc.
At some point, people just started assuming that restaurants incapable of cooking well done steaks since 95% of their steaks are ordered medium or rare were cooking their well done steaks "the right way"

Overcooked steak is past well done.

I had a steak tonight that we ordered medium.
It was very clearly medium rare, darn near rare.

Had I ordered it well done, I have no doubt that same place would have burnt it.
There's plenty of room between medium rare and burnt, but most cooks don't learn this.
