Paulie was an aging man who'd spent his glory years as a baleful thug under the thumb of manipulative cunts whom he could have taken apart one handed. Ralphi Ciferetto was the best character in that series. It was so much shittier without him. He was great comic relief and that series greatly needed an asshole "call it like it is" character that was funny enough to lighten the tone.

That and all of the subplots around him centered on his sexually deviant opulent tastes, which always seemed pretty interesting.

The show never regained it's high watermark which were the two seasons with him in it.

And on a semi-related noted, I always wanted to see Meadow's big black italian bush, who's with me?

Ralphie wasn't my favorite character, but he was definitely top 5 and I took his death pretty hard considering how much I knew I was going to miss his presence.
