Studios urge filmmakers to do it because it's cheaper and more predictable in terms of reshoots.

In one cut, you just have to keep reshooting it until everything goes right.
Or, you could just reshoot it 10 times, cut together the best parts of each shoot, and produce something "just as good" for a flat, predictable rate.

I mean, there are filmmakers who genuinely just think it's a good technique, but a lot of it is studio meddling.
