It was awesome when it came out. Imo some of the scenes from TPM and AOTC really aged badly, but ROTS still looks great.

Just look at the characters, how smooth and soft, and flat. Those beasts. Compared to today's CGI of course, no one is saying it was really bad for its time. I remember thinking it was really sweet when I was a kid.
Anyway, it's much more noticeable in motion.
Also it depends on your use of "holds up". Not even The Asylum would use this stuff today.

The quality of the CGI itself is honestly fine-to-pretty-good for 1999-2003.
There are some genuine problems that are the result of genuine laziness or creator error, such as this frame where a shadow for the column immediately behind the characters is missing entirely.
It was also the result of an attempt to trailblaze - Lucas wanted all-CGI sets and effects, with few to no practical effects (Phantom Menace had significant practical effects, but the Gungan battle stands out due to a greater use of CGI). The technology was not up to the standards of other movies that combined CGI with practical effects.
This meant, however, that AotC and RotS were compared to other "effects movies" that combined the two technologies, and came out behind because Lucas threw the movies entirely to CGI. His interest was in pushing the advancement of full-CGI forward, and arguably, he did; movies like Avatar were able to build on the wholly-CGI model successfully.
Given that the prequel movies are a decade and a half old, I think it's long past time we stopped caring so hard about the quality of the effects. It's the same as when you watch any other old movie - you notice the bad effects, sure, but you just live with them and accept them as the technology of the era, and you notice where the creators were able to cleverly use what they had really well. Lucas didn't necessarily do that, but they're 14-18 year old movies, not recent releases.
