Because most of the people watching this show are only passively aware of the characters. Archie is a comic that everyone is familiar with its existence but not many people actually read so the creator of the comic has a bit more leeway to play with when he made the show, no point in throwing in the lesser known characters this early in the game.

Also Riverdale exists as a completely separate universe from the classic comic and the more recent reboot. It is supposed to be subversive and has to be taken a bit like Morel Orrel meets Twin Peaks

It reminds me a bit of Veronica Mars, lots of corruption and dirty secrets floating around the town as well as history rising up and bring tensions along with it.
Except Veronica Mars was set a year after the murder of Lilly Kane so it wasn't so rushed with pointing fingers at suspects more of a slow burn, this show is set in the immediate aftermath of the murder so the red herrings started early and I'm honestly hoping that they don't play "who's the suspect this week" too many times.

I don't give two shits about what race has been switched, nor do I throw a hissy fit every time the "SJW Agenda" is pushed, so the show is perfectly enjoyable.

I mean, I'll admit they have a lot to fix (Jughead's narration, providing a more compelling weekly plotline), but at the same time, as long as they keep putting this incredible chick on the screen, I'll be watching. Betty and Veronica are beautiful too.
