If you set an exact time in your screenplay it becomes a lot harder to control the scene. Say if a character states it's 7pm and then that needs to change post filming for any reason, or if a clock got left in the scene that shows the wrong time you have to re-shoot the whole scene. For continuity reasons it's normally just easier to say "Later tonight" or whatnot.
