Because you can't make a movie about "sports". Sports intrinsically have a narrative to them so any kind of scripted story is never going to carry the same weight as an actual real sporting event. The story needs to be about the characters themselves with the "sports" aspect being relegated as an accessory to the story, a tool the writer can use as a vehicle for character development.

Any good sports movie is inherently not about sports but about those around the sport. Someone running into the endzone to win the game at the last second during a film is completely void of meaning or weight, but a character learning to deal with conflict because of a sport isn't.
