Zombies dont turn in seconds but turn in 24 hours with each hour affecting the infected differently
1st to 4 hours

4 to 12 hours
>Infected will show signs of extreme aggression and will have insatiable hunger for human organs
>Infected has the ability to run slightly faster than humans and show considerable durability
>infected is fully conscious and is aware of what he is doing but cannot stop
>Infected maybe seen crying and apologizing to the person he currently is feeding on
>Infected maybe seen running after civilians begging them to run and hide while running after them
>Infected maybe heard saying that they cant stop themselves
>Infected maybe seen coordinating with other Infecteds
>It is highly advised to run and hide when encountered with this type of Infecteds as they are in their most dangerous
12-18 hours
>Infected shows signs of mental breakdown
>Mental Breakdown is acquired not from the virus but rather from the acts they did while infected that pushed their minds into its breaking points
>Infected criminals or people with mental illness prior to being infected are shown to have complete consciousness and becomes even more dangerous and is shown to have a symbiotic relationship with the virus and is seen to take pleasure in what they are doing
18-24 hours

That's neglecting a lot of things though.
A lot of Zombies aren't purely infection contagion but also simply the dead rising and infection is secondary. Also zombies can only effectively swarm and completely devour people when they're a massive horde. So even if you manage to get eaten by one or a few zombies they can only eat you so quickly before you rise.

A bunch of mostly rotted corpses aren't going to be a problem. They fall neatly into the "sucky" category.

So you'll rise as a mostly eaten zombie, probably missing limbs, eyes, or large amounts of your general structure. This, again, would leave you in the "sucky" category.
