Think of the evil and power of the ring as being like electricity. Men are made of flesh, not the best conductor but good enough to get fried easily. Wizards, elves, and other magically gifted beings like the eagles (which are a lesser form of angel in the LOTRverse) are like metal. They conduct that corrupting evil super easy. Hobbits are like rubber. They resist that shit, some better than others.

A hobbit is the only creature that could carry the ring long-term. Even an eagle carrying a hobbit carrying the ring could end up fucking everything over. Also Nazgul have flying mounts.
