Evangelion takes advantage of every made-to-measure-for-television anime stereotype in the book, but throws it together in a world full of imperfect characters with self-focused motivations. There is a reason it had such a large impact on the Japanese market when it came out. Many people were angered that it wasn't perfect escapism, and even more were angrier that it called them out on their hypocritical standards for media.

It's a bit of a funny situation.
I would definitely recommend it above most other shows. However it requires being acclimatized to the typical anime TV tropes that were so common in the 80s and 90s that it takes on a completely different flavor when watched from the perspective of someone who understands the general culture of the era.

There's so much fucking trash, like 99.99% of it is pure trash (and 99.99% of what's left is just okay). It's better to watch anime later once people have separated the wheat from the chaff, and you can watch it at your own pace (and in higher quality). The only "incentive" to watch anime season-to-season is to take part in the active discussions, but those are almost always insipid bullshit.
