Spain Lite
It's nice, inexpensive and everyone seems to speak good English. There are more shady areas than in most European countries, though.

Just make sure to pack a fresh pair of socks.
I live in Porto. Haven't traveled much (only some other cities in Portugal and Spain), but I think I can hardly find a city I'll like more than Porto.
Anyway, can't really give you the tourist perspective, but I haven't met anyone that hasn't liked it here. AMA.
I live in Lisbon, although I'm from a smaller city from the interior and like the guy above me, I think I can hardly find a city I'll like more than Lisbon. But I'm fairly well-travelled (and I don't like Porto).

Nice country. Lots of culture. Economically a bit in between Western Europe and Eastern Europe level. Great food for great prices. People are generally nice. Similar weather as Spain. Avoid some parts of the Algarve if you don't like being surrounded by millions of lower class Britons. Other parts of the Algarve are great though. Lisbon and Porto are great, but don't stick to them, go to small mountain villages and unknown beaches.
Inland is extremely hot in the summer: 40c every day.
Lots of forest fires.
Lisbon has incredibly steep hills, you will work out your calves a lot.

Will I be able to live for 800€/month a comfy life in Lisbon?

Depends on where you live. But it's not much.
