I'm really interested in getting to see Turkey. Seems like a beautiful place with rich culture and history. But from what I understand, it's been under some political turmoil lately.
Is it safe to go there, particularly Istanbul? Also, I'm Jewish and spent a year working for an American company in Israel, and I don't want to risk getting beheaded...

Most accounts of Istanbul's violence are totally divorced from peoples' everyday lived experience. Be alert but not alarmed. It's one of the safest cities of its size barring the recent incidents

To be perfectly honest, it's generally pointless to judge the safety factor of flying based on the airline's name or its nationality.
Aviation is quite possibly one of the most tightly regulated industries in the world, and there is no room to fuck around. The maintenance of aircraft is often regulated right down to the last screw, and this is not even hyperbole; you can find stories of mechanics who got screwed (heh) over the wrong screw.
The cheapness of an airline is typically determined by the service (of customers), not the servicing (of vehicles).
