Try Slovakia. There are these open-air museums of traditional architecture, they're like small historic villages, you can go inside the buildings as well.
There's also Kosice with some cool stuff. And people in slovakia are really really friendly. The downside is that not many people can speak english well, the young 20 something people can since that's about when english became mandatory but the older generation is a bit more problematic, expect very broken english and thick accents.

Prague is also pretty fucking great when it comes to architecture. There's also a service where you can go on a tour of the city with a homeless person as a tour guide, they'll show you a very different face of prague compared to the traditional tours (I'm not sure if they have english speaking tourguides though). Also watch out, while weed is decriminalized here for small amounts, it's not fully legal and you can still get fined for possession.

Traditional food is great in both Czech Republic and Slovakia. The centre of Prague is overpriced to shit though and most of it isn't even traditional, both old and new city are a little bit artificial, it's all a show for tourists.
