So what would be the cheapest way to get from NY to Las Vegas besides greyhound? Any other bus services?

have you tried.... google...?
seriously, google.flights is great, as is skyscanner.
compare that to prices on greyhound website, and amtrak, and ta-da.

Honestly if you already have a fuel efficient car don't care too much about time and camping out in national forests and other free areas. Id road trip it.
I spent a month on the road once and went to one coast and back. You can see some amazing stuff in-between too.
other wise....probably bus or a cheap sky-scanner flight.

I really want to do this sometime, but feel like it would take so much longer than a month

Seriously, you can shop around and get a round trip flight for $250. A ONE WAY ticket on a bus is $150 and then you need to factor in three days worth of food.
Buses are a great, cheap option for short trips. But for cross country it's a wash compared to smart airfare shopping.
Plus, three days on a bus? No way. I did 27 hours once from Seattle to LA and I wanted to either die or go on a killing spree.
Make a hot girl profile on SeekingArrangement in NYC, and message guys in LA. Eventually one will offer to fly you out there, and boom, free flight.

I spend about a month and a half total each year road tripping between jobs (seasonal /out/ work) and you can see a LOT in two to three weeks. It also depends on where you are going, there's large chunks of the southwest and great plains that, while beautiful, don't have anything to really stop for.
