I'm from the US and I plan on visiting a friend in the Ukraine this Summer for 2 weeks. I'll be staying with them at their moms house and she will give me an official invitation. What documents and how much money will I need? I never traveled outside the country before. So I am not familiar with the process.
Its the cheapest country I've ever been to. Meal coast you only 1€, subway 20 cents, bus too. You will think everything looks like madhouse at first but you'll get used to. It can be fun visiting all museums for 2€ fee. Nobody speaks english.

Whereabouts in Ukraine? It's a big country, and, while some things apply across the board, there are regional differences and specificities too

You're almost wrong in everything you state. Except museums. They're cheap. English is acceptable in Lviv and Kiev. It is so easy to meet local students on Rynok square in Lviv and some, mostly guys though, will try to have a conversation with you whether you like it or not.
Do I need health insurance?
isn't there a war still going on there? or have the separatists sort of gone home?

War in Crimea. Away from most of the touristy places.

Stay away from Donetsk and Luhansk regions (places no tourist would set foot in anyway) and you'll have no problems
