Just don't go in Paris or South-East ("PACA" region) and you'll be lucky to even see a muslim.

Strasbourg is pretty nice. Overall it depends on your job, there are different opportunities in different cities. You should look that up op.

Montpellier , Toulouse , Bordeaux(really like this one) , Lyon are all great choices.
Don't go to Marseille.

There are not problematic muslims everywhere in France.
Also I doubt you'll find even a single muslim in most small villages, but those are not the most interesting places.
